A thoroughly Modern Menu

Stick ‘em up: Wild city squirrel, shot with a local gun, shaved and orally stuffed with it’s own seasonal English acorns.

FAGGIS: (Instant Classic/Future Traditional)- Hand fisted, regionally located sphinter, jam packed with Loch muir, fanny slapped coot, and seared in  purring skullet.

This dish was a collaboration. Mince by Thom Clarke, Gravy by Anna Magnowska, apparatus by Jon Sweet.

Bannatyne of quail -Glaswegian ‘Bannatyne’ of Quail served on a small little table and stuffed with tangy Capitalism and a thick, creamy smug sauce.
